Match each till item to a recipe once. Anything unmapped is listed rather than silently dropped, so you always know what isn't being counted.

Bring in what you've already sold
Pull in months of past orders so the numbers are about your business rather than about the week since you signed up. It never touches your stock counts — those sales already happened.
